Chef Cristina Bowerman: “The goal should be to open restaurants safely, not keep closing”

Michelin-starred chef and the president of the Association of Italian Ambassadors of Taste, Cristina Bowerman, shared her thoughts on the necessity of keeping the hospitality sector in mind when it comes to new COVID-19 restrictions with ANSA.

“We are in actual chaos. We don’t know who to listen to. What seems absurd to us is that the focus seems to be on the closure while it is obvious that the lockdown, as it has been structured, has been a failure. Because this did not prevent any more than the scenario where we had been open within certain rules.

“Our vision should be the opposite. The goal should be to open restaurants safely, not keep closing” said Bowerman.
