Colagreco, Roca, Atxa, Aduriz and DeAille Tam participate in the Madrid Fusión program

The international gastronomic event Madrid Fusión 2021, which will be held at Ifema from May 31 to June 2, has included many new speakers in its program to talk about culinary trends in the world this year.

At the congress titled ‘Circular Gastronomy’, Mauro Colagreco, the chef of Mirazur, who was selected as the best restaurant in the world in 2019 in The World’s Best 50 Restaurants, Yoko Hasei, a Madrid-based Japanese chef and one of the few women in the world working in the kaiseki kitchen, and DeAille Tam, chosen as the best chef in Asia’s 50 Best Restaurants 2021 list, will take place.

Madrid Fusión will also host big names from Spanish cuisine who continue to explore the product’s close connection with the environment, biodiversity and the region: Joan Roca (El Celler de Can Roca), Eneko Atxa (Azurmendi), Andoni L. Aduriz (Mugaritz), Javier Olleros ( Culler de Pau), Pablo González Conejero (Cabaña Buenavista), Fina Puigdevall (Les Cols).

The congress can be followed from all over the world on the digital platform www.madridfusion.net, although Madrid Fusión 2021 is held at Ifema. Various events such as sessions, competitions, show kitchen, presentations, and conferences will be held in Madrid Fusión for three days.
